Whether cooked on a hot pan or baked in the oven, flatbread is a great base for quick meals, snacks, or sharing platters, and can be customised with herbs, spices, or even stuffed with fillings. Most flatbreads are naturally vegetarian, and many are vegan, too, making them perfect for maintaining a flexitarian diet - just be sure to check for added ingredients like yoghurt or ghee.

Making flatbread from scratch is incredibly simple. Just a few ingredients and a little bit of time, and you’ll have a fresh, soft base for your cheeseburger flatbread pizza. Whether you’re looking to make paprika chicken flatbread or crispy eggplant flatbread, simply follow our recipe below to make yours:

  1. In a large bowl, combine 150g of plain flour, 150g of Greek-style natural yoghurt, one tablespoon of olive oil, and a pinch of salt.
  2. Stir the mixture until it’s fully combined, then transfer the dough onto a lightly floured surface. Knead for about three to four minutes, or until the dough becomes smooth and elastic. If it feels sticky, add a little more flour to your work surface.
  3. Once kneaded, divide the dough into four equal pieces, cover each one with cling film, and let them rest for five to ten minutes. This step ensures your dough is ready for rolling and cooking.
  4. Once rested, place the pieces of dough on a lightly floured surface. Use a rolling pin to roll each piece into a round or rectangle shape, approximately three millimetres thick.
  5. Heat a large frying pan on medium-high heat for three to four minutes, ensuring it's nice and hot for the best results.
  6. Once the pan is ready, pop a couple of flatbreads in and cook for two to three minutes, or until the underside is lightly golden and air bubbles form on the surface.
