  1. Soak the dried beans in plenty of water for at least 8 hours, or overnight.
  2. Drain and rinse the soaked beans well.

  4. Reduce the heat to a gentle simmer and cook for 1 to 1.5 hours, or until tender.
  5. Add salt only at the end of cooking, as adding it too early can toughen the skins.
