• Preheat oven to 220°C/200°C fan-forced. • Cut apple into small chunks. Thinly slice rhubarb. Roughly chop pecans. • In a large baking dish, combine apple, rhubarb, the sugar and a pinch of salt. • Bake until starting to soften, 10-12 minutes. TIP: Peel the apple, if preferred!
• Meanwhile, melt the butter in the microwave or a saucepan. • In a medium bowl, combine melted butter and classic oat mix. • Once fruit is finished, sprinkle crumble mixture evenly over fruit. • Bake until crumble is golden and fruit is tender, 20-25 minutes. TIP: The fruit is cooked when you can pierce it easily with a fork.
• When crumble has finished baking, place white chocolate chips and the vegetable oil in a jug or medium bowl. • Microwave in 20 second bursts, stirring each time, until chocolate is melted. TIP: Chocolate can burn fast, melt in 20 second bursts to keep an eye on it!
• Drizzle white chocolate over crumble. Sprinkle over pecans. • Divide rhubarb and apple crumble between bowls. Enjoy!
