• Set air fryer to 200°C. • Place crumbed basa into air fryer basket and cook, turning halfway, until golden and cooked through, 8-10 minutes. Cook in batches if needed. • Transfer to a paper towel-lined plate. Season with chicken salt and pepper.

TIP: No air fryer? Heat a large frying pan over medium-high heat with enough olive oil to coat the base. When oil is hot, cook crumbed basa until golden and cooked through, 2-3 minutes each side. Transfer to a paper towel-lined plate. Season with salt and pepper

• Meanwhile, roughly chop baby cos lettuce (see ingredients). • Cut tomato into thin wedges. • Finely chop celery. • Thinly slice cucumber into half-moons. • In a small microwave-safe bowl, combine cucumber, the white wine vinegar and a good pinch of sugar and salt. Microwave cucumber for 30 second bursts, until softened.

TIP: Slicing the cucumber very thinly helps it pickle faster!

• In a large bowl, combine cos lettuce, tomato, celery, a drizzle of olive oil and a splash of pickling juice. Season to taste. • Microwave mini flourtortillas on a plate in 10 second bursts until warmed through.
