Cooking Steps

  • Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
  • Place on a lined oven tray. Drizzle with olive oil and toss to coat.
  • Bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

  • Meanwhile, thinly slice red onion.
  • In a small bowl, combine the white wine vinegar and a good pinch of sugar and salt. 
  • Scrunch sliced onion in your hands, then add it to pickling liquid. Add enough water to just cover onion. Set aside.

  • Roughly chop Kumato, cucumber and parsley.
  • Slice lemon into wedges.

  • In a medium bowl, combine Kumato, cucumber, parsley, a drizzle white wine vinegar and olive oil. Season.

  • When the fries have 10 minutes remaining, heat a large frying pan over high heat. Cook beef & pork mince (no need for oil!), breaking up with a spoon, until just browned, 3-4 minutes.
  • Add Mediterranean seasoning and tomato paste and cook until fragrant, 1 minute.
  • Remove pan from heat and stir in the water until combined. Season to taste.

  • To oven tray with fries, add chicken salt and toss to coat.
  • Drain pickled onion.
  • Divide fries between plates. Top with beef and pork, pickled onions and drizzle over dill & parsley mayonnaise.
  • Crumble over fetta cubes and top with Kumato salsa to serve. Serve with lemon wedges. Enjoy!
