- Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
- Place on a lined oven tray. Drizzle with olive oil and toss to coat.
- Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- Meanwhile, thinly slice red onion.
- In a small bowl, combine the white wine vinegar and a good pinch of sugar and salt.
- Scrunch sliced onion in your hands, then add it to pickling liquid. Add enough water to just cover onion. Set aside.
- Roughly chop Kumato, cucumber and parsley.
- Slice lemon into wedges.
- In a medium bowl, combine Kumato, cucumber, parsley, a drizzle white wine vinegar and olive oil. Season.
- When the fries have 10 minutes remaining, heat a large frying pan over high heat. Cook beef & pork mince (no need for oil!), breaking up with a spoon, until just browned, 3-4 minutes.
- Add Mediterranean seasoning and tomato paste and cook until fragrant, 1 minute.
- Remove pan from heat and stir in the water until combined. Season to taste.
- To oven tray with fries, add chicken salt and toss to coat.
- Drain pickled onion.
- Divide fries between plates. Top with beef and pork, pickled onions and drizzle over dill & parsley mayonnaise.
- Crumble over fetta cubes and top with Kumato salsa to serve. Serve with lemon wedges. Enjoy!
