Cooking Steps

Finely chop the garlic. In a medium saucepan, melt the butter with a dash of olive oil over a medium heat. Cook 1/2 the garlic until fragrant, 1-2 minutes. Add the water and a generous pinch of salt and bring to the boil. Add the jasmine rice, stir, cover with a lid and reduce the heat to low. Cook for 12 minutes, then remove from the heat and keep covered until the rice is tender and all the water is absorbed, 10-15 minutes. Stir through the crushed peanuts. TIP: The rice will finish cooking in its own steam so don't peek!

While the rice is cooking, thinly slice the carrot into half-moons. Chop the broccoli (including the stalk!) into small florets. Slice the red capsicum.

In a large frying pan, heat a drizzle of olive oil over a high heat. Add the carrot, broccoli and capsicum and cook, tossing, until softened, 6-8 minutes. Add the remaining garlic and cook until fragrant, 1-2 minutes. Season. Transfer to a plate. TIP: Add a dash of water to the pan to help speed up the cooking process.

While the veggies are cooking, in a small bowl, combine the honey soy marinade, ginger paste and sesame oil blend.

Return the pan to a high heat with a drizzle of olive oil. Add the beef mince and cook, breaking up with a spoon, until browned, 3-4 minutes. Add the sauce mixture and return the veggies to the pan, tossing to combine, 1 minute. Season to taste.

Divide the garlic nutty rice and honey-soy ginger beef stir-fry between bowls. Spoon over any sauce from the pan. Drizzle with the sesame dressing. Tear over the coriander.
