• Boil the kettle. • Half-fill a medium saucepan with the boiling water. Add basmati rice and a pinch of salt and cook, uncovered, over a high heat until tender, 12 minutes. • Drain and return to pan. Cover to keep warm.

• While rice is cooking, thinly slice carrot into half-moons.

• In a large frying pan, heat a drizzle of olive oil over medium high heat. Cook beef mince, breaking up with a spoon, until just browned, 4-5 minutes. Add Southeast Asian spice blend and ginger paste and cook until fragrant,1 minute. Transfer to a bowl. Cover to keep warm. • Return frying pan to a medium-high heat with a drizzle of olive oil. Cook carrot, tossing, until tender, 4-5 minutes. Add shredded cabbage mix and the soy sauce. Cook until softened, 2-3 minutes. Remove from heat. Season to taste.

TIP: For best results, drain the oil from the pan before adding the spice blend and ginger paste.

• Thinly slice long red chilli (if using). • Divide rice between bowls. Top with sautéed veggies and Southeast Asian pork. • Drizzle with sesame dressing. Garnish with chilli, roasted peanuts and pickled ginger to serve.
