
You know what’s cool? Yeah, that’s right – burgers. You know what else is cool? Mixing up a fast food classic with the sophisticated combination of pork, red apple and fennel seeds. Potato wedges are cool. You know what’s even cooler? Sweet potato wedges. In fact, you may as well put on your sunglasses at night right now, because you just became the coolest cat in the neighbourhood.

bake-at-home burger buns

Preheat the oven to 220°C / 200°C fan-forced. Chop the sweet potato (unpeeled) into 2 cm wedges. Finely slice the red onion. Grate the red apple.

Place the sweet potato wedges on the oven tray lined with baking paper. Drizzle with olive oil, season with a pinch of salt and pepper and toss to coat. Place the tray in the oven and cook for 25-30 minutes, or until tender and golden.

While the sweet potato is cooking, place the pork mince, red onion, apple and fennel seeds (if using) into a medium bowl and season with a pinch of salt and pepper. Combine the ingredients well with your hands and form the mixture into patties about the size of the burger buns (you should get one patty per person).

Heat a drizzle of olive oil in a medium frying pan over a medium-high heat. Add the pork & apple patties and cook for 4-5 minutes on each side, or until cooked through.

While the patties are cooking, place the bake-at-home burger buns directly onto the wire racks in the oven. Cook for 3 minutes, or until heated through. Remove from the oven and slice in half.

Spread mayonnaise over the base of each burger bun and fill with a pork & apple patty and a handful of mixed salad leaves. Serve the sweet potato wedges on the side.
