• In a large frying pan, melt the butter (for the rice) with a dash of olive oil over
medium-high heat and cook half the garlic paste until fragrant, 1 minute.
• Add broccoli & cauliflower rice mix and cook until softened, 2-4 minutes.
Season to taste with salt and pepper. Transfer to a bowl and cover to keep warm.
• Meanwhile, grate carrot.
• Trim and roughly chop pea pods.
• Thinly slice spring onion.
• In a large bowl, combine shredded cabbage mix, grated carrot, pea pods and
Japanese-style dressing and a drizzle of olive oil. Season to taste.
• Wipe out frying pan and return to high heat with a drizzle of olive oil.
• Cook pork strips in batches, until golden, 2-3 minutes.
• Reduce heat to low, then stir in Japanese curry paste, the butter (for the sauce),
water, honey and remaining garlic paste until slightly reduced, 1-2 minutes.
• Divide the broccoli and cauliflower rice and Japanese slaw between bowls. Top
with pork curry. Spoon over any remaining sauce from pan.
• Sprinkle with spring onion to serve. Enjoy!
