• Preheat oven to 220°C/200°C fan-forced.
• Cut sweet potato into fries.
• Cut zucchini into thick sticks.
• Place sweet potato and zucchini on a lined oven
tray. Drizzle with olive oil and season with salt and
pepper. Toss to coat, then bake until tender,
25-30 minutes.

• While the veggie fries are baking, trim the ends of
green beans.
• Slice lemon into wedges.
• When the fries have 10 minutes cook time
remaining, add green beans to the veggie tray,
tossing to coat. Return to the oven until tender,
10 minutes.

• In a shallow bowl, combine the plain flour, salt and
a good pinch of pepper. In a second shallow bowl,
whisk the egg. In a third shallow bowl, combine
Parmesan cheese and panko breadcrumbs.

• Dip chicken tenderloins into the seasoned flour,
then in the egg and finally in the panko-Parmesan
mixture. Transfer to a plate.

well afterwards.

• In a large frying pan, add enough olive oil to cover
the base and heat over medium-high heat. Cook
crumbed chicken in batches, until golden and
cooked through, 2-4 minutes each side.
• Transfer to a plate lined with a paper towel.
TIP: Chicken is cooked through when it’s no longer pink
inside.

• Divide crumbed cheesy chicken dippers, sweet
potato and zucchini fries and green beans
between plates.
• Serve with lemon wedges and garlic aioli. Enjoy!
