Balsamic Vinaigrette Dressing

¼ cup
vinegar (white wine or rice wine)
• Thinly slice red onion.
• In a small bowl, combine the vinegar and a good pinch of sugar and salt.
• Scrunch sliced onion in your hands, then add it to pickling liquid. Add
enough water to just cover onion. Set aside until pickled, 15 minutes.
• Meanwhile, halve snacking tomatoes.
• Thinly slice cucumber into rounds.
• Pick and roughly chop mint leaves.
• Drain pickled onion.
• In a large bowl, combine spinach & rocket mix, snacking tomatoes,
cucumber, pickled onion, kalamata olives, mint and balsamic vinaigrette
dressing. Season with salt and pepper.
• Divide balsamic cherry tomato salad between bowls.
• Crumble over fetta cubes to serve. Enjoy!
