• Finely chop garlic. Thinly slice spring onion. Slice the kernels off the corn cob. • Heat a large frying pan over a high heat. Add the corn kernels and cook until lightly browned, 4-5 minutes. Transfer to a large bowl.
TIP: Cover the pan with a lid if the kernels are "popping" out.
• In a medium bowl, combine beef mince, All-American spice blend, fine breadcrumbs, garlic, the salt and egg. • Shape beef mixture into 2 patties per person.
• Return the frying pan to a medium-high heat with a drizzle of olive oil. • Cook beef patties until just cooked through, 4-5 minutes each side. • In the last 1-2 minutes of cook time, sprinkle shredded Cheddar cheese over the patties and cover with a lid or foil so the cheese melts.
• Add slaw mix and spring onion to corn. Add a drizzle of white wine vinegar, a drizzle of olive oil and season. • Divide spring onion slaw between bowls and top with the cheesy beef patties. Top with burger sauce and tear over coriander to serve.
