Mild Caribbean Jerk Seasoning
• Preheat oven to 240°C/220°C fan-forced. • Cut potato into fries. • Place fries on an oven tray lined with baking paper. Drizzle with olive oil and season with salt and pepper. • Toss to coat, then bake until tender, 20-25 minutes.
• Finely chop garlic. • Cut corn cob in half. • Thinly slice tomato. • In a medium bowl, combine slaw mix, half the garlic aioli, the white wine vinegar and a pinch of salt and pepper. • In a small bowl, combine the butter and a small pinch of mild Caribbean jerk seasoning (the rest will be used in step 3!). • Bring a medium saucepan of salted water to the boil.
• In a large bowl, combine garlic, the egg, pork mince, a pinch of salt and pepper, fine breadcrumbs and the remaining mild Caribbean jerk seasoning. • Shape mixture into patties slightly larger than your burger buns (1 patty per person). Set aside. • In a large frying pan, heat a drizzle of olive oil over medium heat. Add patties and cook, turning, until browned and cooked through, 4-5 minutes.
• While the patties are cooking, place corn cobs into the pan of boiling water. Cook until tender and bright yellow, 5 minutes. Drain.
• Halve bake-at-home burger buns and bake directly on a wire rack in the oven until heated through, 2-3 minutes.
• Build burgers by spreading a layer of the remaining aioli over the base of the bun. • Top with a Caribbean pork patty, tomato and slaw. Serve with fries and a corn cobs. • Spread the jerk butter over the corn to serve. Enjoy!
