Cooking Steps

Bring a medium saucepan of water to boil. Peel and crush the garlic. Finely grate the ginger. Finely slice the long red chilli (if using). Juice the lime.

In a small bowl, mix together the hoisin sauce, soy sauce, rice wine vinegar, water (for the sauce) and 1 tbs (for 2 people)/2 tbs (for 4 people) of lime juice in a bowl.

Add the ramen noodles to the boiling water and cook for 3 minutes, or until soft. Drain and refresh with cold water.

Heat a drizzle of olive oil in large frying pan or wok over a medium-high heat. Add the snow peas red capsicum mix and cook, tossing regularly, for 3-4 minutes or until just tender. Remove from the pan and set aside on a plate.

Return the frying pan to a medium high heat with a drizzle of olive oil. Add the pork mince and cook, breaking up with a wooden spoon, for 3-4 minutes or until browned. Add the garlic and ginger and cook for a further 1 minute, or until fragrant. Reduce the heat to medium and add the hoisin sauce mixture. Cook, stirring regularly, for 1 minute or until starting to thicken. Add the veggies and ramen noodles to the pan and stir through to coat for a further 1-2 minutes.

Divide the sweet and sour pork between bowls and garnish with the roasted cashews and long red chilli (if using). Enjoy!
