• Preheat oven to 240°C/220°C fan-forced. Cut sweet potato into bite-sized chunks. • Season with salt, drizzle with olive oil and toss to coat. • Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
• Meanwhile, trim baby broccoli and half any thick stalks lenghways. Roughly chop Asian greens. Halve lime. • In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook baby broccoli, until tender, 5-6 minutes. • Add Asian greens and cook until slighly wilted, 2 minutes. • Remove from heat, add a good squeeze of lime juice and season with salt and pepper. Transfer to a bowl.
TIP: Add a dash of water to the pan to help speed up the cooking process.
• While the veggies are cooking, cut chicken thigh into 2cm chunks. • Return the frying pan, heat a drizzle of olive oil over high heat. • When oil is hot, cook chicken, tossing, until browned, 5-6 minutes. • Remove from heat and add ginger paste and teriyaki sauce, tossing to coat. Season to taste.
• To the tray with sweet potato, sprinkle with everything garnish and toss to coat. • Divide roasted sesame sweet potato, ginger-lime Asian greens and teriyaki chicken between 4 microwave-safe containers. • Spoon over any remaining teriyaki sauce, cover with a lid and refrigerate. • When ready to serve, microwave on high, for 4 minutes, stirring halfway, until heated through.
