BAKE THE FRIES

• Preheat the oven to 240°C/220°C fan-forced. Cut potato into fries. • Place fries on a lined oven tray, drizzle with olive oil and season with salt and pepper. • Toss to coat, then bake until tender, 20-25 minutes.

• While the fries are baking, combine beef mince, Aussie spice blend, the egg and fine breadcrumbs in a medium bowl. • Using damp hands, form mince mixture into 2cm thick patties slightly larger than your buns (1 patty per person).

COOK THE BACON

• In a large frying pan, heat a small drizzle of olive oil over medium-high heat. • Add diced bacon and cook, breaking up with a spoon, until golden, 4-6 minutes. • Add the brown sugar and water and cook until caramelised, 30 seconds. Transfer to a plate lined with baking paper.

COOK THE PATTIES

• When the fries have 10 minutes remaining, wipe out the pan and return to medium-high heat with a drizzle of olive oil, if needed. • Cook the patties until cooked through, 4-5 minutes each side.

HEAT THE BUNS

• While the burgers are cooking, halve bake-at-home burger buns and bake directly on a wire oven rack until heated through, 2-3 minutes. • Meanwhile, thinly slice tomato.

• Spread the burger bun bases with some of the mayonnaise. • Top with some mixed salad leaves, the beef patties, tomato and bacon. • Serve with fries and any remaining mayonnaise. Enjoy!
