• Drain and rinse cannellini beans. • Zest lemon to get a pinch and slice into wedges. Finely chop garlic.
• In a large frying pan, heat a drizzle of olive oil over medium heat. • Cook garlic until fragrant, 1 minute. • Add baby spinach and toss until wilted, 1 minute. Season with salt and pepper.
• To a food processor, add cannellini beans, lemon zest, the salt, a pinch of pepper and 2 tbs of olive oil. Squeeze in juice of the lemon and blitz until desired consistency. • Add ricotta and spinach mixture and blitz until just combined. Season to taste.
• Transfer spinach, ricotta and white bean dip to a serving bowl. • Drizzle with olive oil and sprinkle with everything garnish. Enjoy!
