Cooking Steps

• Boil the kettle. Half-fill a medium saucepan with the boiling water. • Add basmati rice and a pinch of salt and cook, uncovered, over high heat until tender, 12 minutes. Drain.

Add prawns to bowl with ginger paste and garlic as above.

• In a large frying pan, heat a drizzle of olive oil over high heat. • Cook the green beans, carrot and capsicum until softened, 5-6 minutes. Transfer to a bowl. • Return frying pan to high heat with a drizzle of olive oil. When oil is hot, cook beef strips, tossing, in batches until browned and cooked through, 1-2 minutes. Transfer to a plate. • Return all beef and veggies to pan then add oyster sauce mixture, stirring, until slightly thickened, 1-2 minutes. TIP: Cooking the meat in batches over a high heat helps it stay tender.

In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook prawns, tossing, until pink and starting to curl up, 3-4 minutes.

Return prawn to pan after cooking veggies and sauce, tossing together until warmed through.
