Roughly chop the tomato.
In a small bowl, combine the hummus with the caramelised onion chutney.
Spread the hummus over the wraps. Divide the tomato, falafel & mixed salad leaves between the wraps. Tuck in the ends and roll into burritos. Wrap in foil or plastic wrap and refrigerate.
At lunchtime, remove the wrapping and enjoy or reheat in a sandwich press or in 30 seconds bursts in the microwave until heated to your liking.
NB: if giving a reheating option would swap mixed salad for spinach. NOTE: this could also be written as using the caramelised onion to make a salad dressing, place a the bottom of a container, add the salad, falafel & tomato. Refrigerate. Then assemble fresh at lunch time (spread hummus over tacos, microwave falafel, toss salad in dressing. (possible to cost in 2 x 100g hummus, increases price to $6.30)
