Cooking Steps

Preheat the oven to 200°C/180°C fan-forced. Finely slice the red capsicum (use suggested amount). Finely slice the red onion. Finely slice the long green chilli (if using). Finely slice the chicken breast into 0.5 cm strips.

In a medium bowl, toss the chicken slices with a drizzle of olive oil and a good pinch of salt and pepper.

Heat a drizzle of olive oil in a large frying pan over a medium-high heat. Add the chicken breast slices and cook, tossing occasionally, for 3-4 minutes or until just cooked through.

Lay the wholemeal pizza bases on a flat surface, rough side down. Spread the BBQ sauce evenly across the pizza bases using the back of a spoon. Top evenly with the chicken breast, red capsicum, red onion and long green chilli and sprinkle over the grated Cheddar cheese.

Place the pizzas in the oven directly onto the wire racks and cook for 10-15 minutes, or until the cheese is melted and golden. TIP: Placing the pizzas directly onto the wire racks helps the base to crisp up.
