• Preheat oven to 240°C/220°C fan-forced. Cut potato into bite-sized chunks. • Place on a lined oven tray. Drizzle with olive oil and toss to coat. • Roast until tender, 20-25 minutes.
• Meanwhile, thinly slice tomato into wedges. Thinly slice cucumber into half-moons. • In a small bowl, combine harissa paste, hummus and a splash of water. Set aside.
• In a medium bowl, combine paprika spice blend and a drizzle of olive oil. Add beef rump, turning to coat. • When potatoes have 10 minutes remaining, in a large frying pan, heat a drizzle of olive oil over high heat. • When oil is hot, cook the beef, turning, for 4-6 minutes (depending on thickness), or until cooked to your liking. Transfer to a plate to rest.
TIP: If your beef rump is more than 4cm thick, cut in half horizontally before seasoning.
• While beef is resting, in a medium bowl, combine the honey and a drizzle of olive oil and vinegar. • To bowl, add spinach & rocket mix, tomato and cucumber, tossing to coat. Season to taste.
• Microwave pita pockets on a plate for 1 minute, until warmed through.
• To tray with roasted potatoes, sprinkle over everything garnish and toss to coat. • Thinly slice beef. • Halve pita pockets then fill with fennel salad and spiced beef. Drizzle over harissa hummus. • Serve with roasted seeded potatoes and garlic aioli. Enjoy!
