Pre-heat the oven to 200 /180 fan-forced. Chop the brown onion. Thinly slice the lettuce . Finely chop the coriander. Grate the Cheddar cheese. Grate the carrot and set aside in a small bowl.

Heat a drizzle of olive oil in a large frying pan over a medium-high heat. Add in the onion and cook for 4 minutes or until slightly softened. Add in the beef mince and the taco seasoning. Cook breaking up with a wooden spoon for 4-5 minutes, or until the beef mince is browned. Season with the salt and a pinch of pepper.

In a small bowl, mix the mayonnaise with the coriander and season with salt and pepper.

To assemble the burrito, lay the classic tortillas on aluminium foil. Add in the beef mince, carrot, lettuce, cheese and a drizzle of the corinader mayo and roll each burrito tightly together in aluminium foil.

Place the burritos onto an oven trauy and bake for 5-7 minutes or until the cheese has melted.

Cut the Mexican burritos in half and divide between plates. Enjoy!
