Cooking Steps

  • Preheat oven to 240°C/220°C fan-forced.
  • Cut pumpkin and carrot into large chunks (peel if preferred).
  • Cut zucchini into thick rounds.
  • Cut red onion into thick wedges.

  • Roughly chop chorizo.

  • Place prepped veggies and chorizo on a lined oven tray (if your oven tray is crowded, divide between two trays).
  • Drizzle olive oil and season with salt. Toss to coat and bake until veggies are tender and chorizo is golden, 25-30 mins.

  • Divide Mediterranean chorizo traybake between plates.
  • Crumble over fetta cubes and dollop with the mayonnaise.
