Cooking Steps

Cook the orecchiette
1

• Boil the kettle.
• Half-fill a large saucepan with boiling water and add a generous pinch of salt.
• Cook orecchiette over high heat until ‘al dente’, 11 minutes. Reserve some pasta water (see ingredients). Drain orecchiette.

TIP: ‘Al dente’ pasta is cooked through but still slightly firm in the centre.

Start the sauce
2

• Meanwhile, halve snacking tomatoes and trimmed green beans.
• In a large frying pan, heat a drizzle of oil from marinated goat cheese over medium-high heat.
• When oil is hot, cook chicken breast strips, tomatoes and green beans, stirring occasionally, until blistered,  4-5 minutes.
• Add garlic paste and garlic & herb seasoning, then cook until fragrant,  1-2 minutes.

TIP: The chicken is cooked when it is no longer pink inside.

Bring it all together
3

• To the pan, add diced tomatoes with garlic & onion, the salt and reserved pasta water. Cook, stirring, until sauce is slightly thickened, 1-2 minutes.
• Add light cooking cream and cooked orecchiette, then stir to combine,
1-2 minutes. Season to taste with salt and pepper.

TIP: Seasoning is key in this dish, so taste and season with more salt and pepper if needed.

Finish & serve
4

• Divide speedy chicken, tomato orecchiette between bowls.
• Crumble over marinated goat cheese to serve. Enjoy!
