Cooking Steps

Cook the chicken & bacon
1
  • Cut chicken thigh into 2cm chunks.
  • In a large frying pan, heat a drizzle of olive oil over high heat.
  • When oil is hot, cook chicken and bacon, tossing, until browned and cooked through, 5-6 minutes. In the last minute of cook time, add the paprika spice blend to the chicken and cook until fragrant.

TIP: The chicken is cooked when it is no longer pink inside.

Get prepped
2
  • Meanwhile, thinly slice apple into wedges.
  • Roughly chop pecans.
Toss the salad
3

• In a large bowl, combine gourmet leaf mix, apple, pecans, dried cranberries and a drizzle of olive oil and vinegar. Season to taste with salt and pepper.

Finish & serve
4
  • Place large wraps on a microwave-safe plate and cover with a damp paper towel.
  • Microwave on high, until warmed through and softened, 1 minute.
  • Fill wraps, rough-side down, with chicken, bacon and some salad. Drizzle over creamy maple dressing.
  • Fold bottom of wrap over filling, then fold in the sides. Roll tightly from the bottom to form the wrap. Serve with any remaining salad. Enjoy!

TIP: Warming the wraps through helps them roll easily without tearing!
