According to data from Canstar Blue, Pizza reigns supreme as Australia's favorite takeaway food, with a staggering 34% of Aussies declaring it their top choice. But how did this iconic dish come to be?

Tomato Revolution: The pizza's journey is said to have begun in the 1500s when tomatoes, originally from Peru, were introduced to Italy.

It didn't take long for this new fruit to become a staple in the Neapolitan diet, as they ingeniously adorned their dough with it. Crafted with pantry essentials like oil, cheese, and herbs, it was just as convenient and delicious then as it is now.

Early Innovation: While today's pizzas often feature inventive toppings on flatbreads or tortillas – like in this crunchy Aztec Tortilla Bowl –, this style of pizza was a hit even centuries ago.

Italy's culinary pioneers showcased their innovative spirit, laying the foundation for the diverse world of pizza we adore today.

In 1889, King Umberto I and Queen Margherita of Savoy visited Naples. They had become bored with their steady diet of French haute cuisine (sigh), and they asked to taste some local specialities. Pizzeria Brandi chef Raffaele Esposito and his wife produced three pizzas for the royal couple. One featured tomatoes, mozzarella and basil, with the red, white and green matching the colours of the Italian flag (though a description of this flavour can be found as early as 1866).

Queen Margherita chose this one as her favourite, and it was named Pizza Margherita. The Queen was so fond of her namesake pie that she sent the pizzaiolo a thank-you letter, which can still be seen at the restaurant to this day. Her embrace of the peasants’ treat improved its status, though the dish didn’t become terribly popular in Italy until after World War II.

Pizza Margherita remains on plenty of menus today. But the queen’s contribution to the origin of pizza goes beyond the modern Margherita. Nowadays, cheese and some form of tomato are baseline toppings for most pies.
