Cooking Steps

Cook the chicken

• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• When oil is hot, cook chicken breast strips in batches, until browned and cooked 
through, 4-5 minutes. 
TIP: The chicken is cooked through when it is no longer pink inside.

• Meanwhile, thinly slice long chilli (if using). 
• Halve snacking tomatoes.
• Slice cucumber into thin rounds.
• Slice lime into wedges. 

Cook the fried rice

• To the pan with chicken, crack in the egg and cook, tossing, until scrambled,  
1-2 minutes. 
• Add microwavable basmati rice, laksa paste, a generous squeeze of lime juice, 
the soy sauce and water and cook until fragrant and combined, 2-3 minutes. 
TIP: Add a splash of water if the fried rice looks dry. 

Finish & serve

• Divide one-pan chicken laksa fried rice between bowls.
• Top with tomatoes, cucumber and garnish with crispy shallots and chilli.
• Serve with any remaining lime wedges. Enjoy!
