• Pick thyme leaves. Roughly chop walnuts. • Slice pear into thin wedges.
• In a medium frying pan, melt the butter over medium heat. • Add thyme, walnuts, honey and chilli flakes (if using). Cook, stirring, until beginning to brown, 2-3 minutes. • Move walnuts to the side and add brie to pan, turning to coat, 1 minute. Remove from heat. Season with salt and pepper.
• Arrange double brie, smoked cheddar cheese, prosciutto, quince paste, wafer crackers, olive tapenade dip and semi-dried tomatoes on a large platter. • Spoon honey thyme walnut over brie. Enjoy!
