- Boil the kettle.
- Cut zucchini into bite-sized chunks.
- Cut chicken tenderloins into 2cm chunks.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook diced bacon, breaking up with a spoon, until golden, 4-6 minutes.
- Add chicken and zucchini and cook, tossing occasionally, until chicken is browned and cooked through, 5-6 minutes.
TIP: Chicken is cooked through when it’s no longer pink inside.
- Half-fill a large saucepan with boiling water and add a generous pinch of salt.
- Cook egg fettuccine over high heat, until ‘al dente’, 2 minutes.
- Reserve some pasta water (see ingredients). Drain fettuccine, then return to the saucepan.
TIP: ‘Al dente’ pasta is cooked through but still slightly firm in the centre.
- To the pan with chicken, add garlic paste and cook until fragrant, 1 minute.
- Stir in light cooking cream, stock concentrate and the reserved pasta water and cook until slightly thickened, 2-3 minutes.
- Add cooked pasta, baby spinach leaves and basil pesto, tossing to combine. Season to taste with pepper.
Divide luxe chicken and bacon pesto fresh fettuccine between bowls.
Top with Parmesan cheese to serve. Enjoy!
