Cooking Steps

Start the pasta

  • Boil the kettle. 
  • Cut zucchini into bite-sized chunks.
  • Cut chicken tenderloins into 2cm chunks.
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook diced bacon, breaking up with a spoon, until golden, 4-6 minutes.
  • Add chicken and zucchini and cook, tossing occasionally, until chicken is browned and cooked through, 5-6 minutes. 

TIP: Chicken is cooked through when it’s no longer pink inside.  

Cook the fettuccine

  • Half-fill a large saucepan with boiling water and add a generous pinch of salt.
  • Cook egg fettuccine over high heat, until ‘al dente’, 2 minutes.
  • Reserve some pasta water (see ingredients). Drain fettuccine, then return to the saucepan. 

TIP: ‘Al dente’ pasta is cooked through but still slightly firm in the centre.

Bring it all together

  • To the pan with chicken, add garlic paste and cook until fragrant, 1 minute.
  • Stir in light cooking cream, stock concentrate and the reserved pasta water and cook until slightly thickened, 2-3 minutes.
  • Add cooked pasta, baby spinach leaves and basil pesto, tossing to combine. Season to taste with pepper. 
Finish & serve

Divide luxe chicken and bacon pesto fresh fettuccine between bowls.
