• Preheat oven to 220°C/200°C fan-forced. In a medium bowl, combine beef mince, egg, fine breadcrumbs and Aussie spice blend. • Using damp hands, roll heaped spoonfuls of beef mixture into small meatballs (4-5 per person). • Transfer meatballs to medium baking dish. Drizzle with olive oil and turn to coat. • Bake until browned, 15-20 minutes.
• Meanwhile, cut ciabatta into slices. Thinly slice pear into wedges. • In a small heatproof bowl, combine garlic paste and the butter. • Microwave in 10 second bursts or until melted. Season with salt and pepper.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook diced bacon, breaking bacon up with a spoon, until golden, 4-6 minutes. • When meatballs have finished baking, remove from oven, and add passata, bacon, garlic & herb spice blend, the brown sugar and water, stirring to combine. • Turn the meatballs to coat, sprinkle over shredded cheddar cheese, then bake until sauce is slightly thickened and cheese is melted, 8-10 minutes. • Meanwhile, brush garlic butter over cut sides of ciabatta slices. • Bake ciabatta on a wire rack until golden, 5-7 minutes.
TIP: For best results, drain the oil from the baking dish before adding the sauce.
• Meanwhile, in a medium bowl, combine pear, mixed salad leaves, a drizzle of white wine vinegar and olive oil. Season. • Divide cheesy beef meatballs and bacon tomato sauce, garlic dippers and pear salad between plates. Tear over parsley. Enjoy!
