- Thinly slice garlic and long chilli (if using).
- Zest lemon to get a pinch, then slice into wedges.
- Cut bake-at-home ciabatta into slices. Toast or grill to your liking.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook peeled prawns, tossing, until pink and starting to curl up, 3-4 minutes.
- In the last minute of cook time, add the butter, garlic, chilli, lemon pepper seasoning and lemon zest, tossing, until fragrant.
- Remove pan from heat and add a good squeeze of lemon juice. Season to taste.
- Transfer garlic butter prawns to a serving dish.
- Top with rocket leaves and squeeze over some lemon juice.
- Serve with toasted ciabatta and any remaining lemon wedges. Enjoy!
