Cooking Steps

Cook the chick'n

  • Heat a large frying pan over medium-high heat with enough olive oil to coat the base.
  • Cook plant-based crumbed chicken until golden and heated through, 2-3 minutes on each side.
  • Transfer to a paper towel-lined plate.

  • Meanwhile, thinly slice red onion (see ingredients).
  • In a small microwave-safe bowl, combine onion, white wine vinegar a good pinch of sugar and salt.
  • Microwave onion for 30 second bursts, until softened.
  • Drain and rinse lentils.
  • Thinly slice cucumber into rounds. Finely chop garlic.
Cook the lentils & toss the salad

  • Wipe out frying pan and return to medium-high heat with a drizzle of olive oil. Cook lentils, chermoula spice blend and garlic until fragrant and warmed through, 2-3 minutes.
  • In a medium bowl, combine mixed salad leaves, shredded cabbage mix, a drizzle of olive oil and vinegar. Season to taste.
Finish & serve

  • Drain pickled onion.
  • Divide garlicky lentils, cabbage salad, pickled onion, cucumber rounds, hummus and chermoula crumbed chick'n between bowls.
  • Crumble over fetta cubes and garnish with flaked almonds to serve. Enjoy!
