This meal will quickly gain some serious fans by the time this lamb ragu number hits the dinner table. If the aromas alone haven’t sold you, you’ll rapidly be swept away by the saucy and slightly spicy sauce that is perfect for our cheat’s pappardelle to twirl up. Don’t forget the garlic bread. It’s great for mopping up the leftover sauce!

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

Get prepped
1

• Preheat oven to 200ºC/180ºC fan-forced.
• Boil the kettle. In a small bowl, add the butter and
allow to come to room temperature.
• Slice cucumber into half-moons.
• Finely chop garlic.
• To the butter, add half the garlic. Season with salt
and pepper, then mash to combine.
• Cut lasagne sheets into 2cm-thick ribbons
widthways.

Make the garlic bread
2

• Cut deep slices across bake-at-home ciabatta
in 1cm intervals, taking care to not slice all the way
through.
• Push garlic butter into ciabatta slices and wrap in
foil.
• Place ciabatta directly on wire racks in the oven and
bake until heated through, 8-10 minutes.

Cook the cheat’s pappardelle
3

• Half-fill a large saucepan with boiling water and add
a generous pinch of salt.
• Cook the lasagne ribbons over high heat, until
‘al dente’, 3-4 minutes.
• Reserve some pasta water (see ingredients). Drain
lasagne ribbons, then return to saucepan and
drizzle with olive oil.

TIP: ‘Al dente’ pasta is cooked through but still slightly
firm in the centre.

Make the sauce
4

• Meanwhile, heat a large frying pan over
medium-high heat. Cook lamb mince (no need for
oil!), breaking up with a spoon, until just browned,
3-4 minutes.
• Reduce heat to medium, then add Aussie spice
blend and remaining garlic and cook until fragrant,
1 minute.
• Add diced tomatoes with garlic & onion, the
balsamic vinegar, stock concentrate, the brown
sugar and reserved pasta water. Cook, stirring,
until slightly thickened, 3-4 minutes.
• Remove pan from heat, then add cooked lasagne
ribbons and toss to coat. Season to taste with salt
and pepper.

Make the salad
5

• In a medium bowl, combine mixed salad leaves,
cucumber and a drizzle of balsamic vinegar and
olive oil. Season to taste.

Finish & serve
6

• Divide rich Italian lamb ragu and cheat’s
pappardelle between bowls.
• Top with Parmesan cheese. Serve with garlic
ciabatta and cucumber salad. Enjoy!

Review summary

Updated on Oct 2026
  • Flavour: Opinions were mixed — one customer found the lamb flavour not to their taste, while another loved the dish and had enough for next-day lunches.
  • Suggestions: Some found the sauce a little watery even when following the recipe; reducing it for a few extra minutes on the cooktop may help thicken it.
  • Leftovers: The ragu made enough for lunch the following day, which several customers appreciated.
