A steakhouse classic, done at home. Thick-cut porterhouse seared to perfection, finished with a melting knob of rosemary butter that soaks into every bite. Silky mash and sautéed greens on the side, it’s simple, unapologetic and exactly what a good steak night should look like.
1
Baby Broccoli
1
Garlic
1 packet
Green Beans
1
Lemon
350 g
Porterhouse Steak
2
Potato
1 packet
Rosemary
1
Sea Salt Flakes
1 drizzle
olive oil
30 g
butter (for the mash)
(Contains: Milk)
2 tbs
milk
(Contains: Milk)
40 g
butter (for the sauce)
(Contains: Milk)
¼ tsp
cracked black pepper

• See ‘Top Steak Tips!’ (below left). Take the butter
(for the sauce) out from the fridge (to bring to room
temp!).
• Bring a medium saucepan of lightly salted water to
the boil. Peel potato and cut into large chunks.
• Add potato to the saucepan of boiling water and
cook until easily pierced with a fork, 12-15 minutes.
• Drain and return to the saucepan. Add the butter
(for the mash), milk and salt to the potato. Mash
until smooth. Cover with a lid to keep warm.

• While the potatoes are boiling, finely chop garlic.
• Trim green beans.
• Trim baby broccoli and halve any thicker stalks
lengthways.
• Zest lemon to get a pinch, then slice into wedges.
• Pick and finely chop rosemary (see ingredients).

• In a large frying pan, heat a drizzle of olive oil
over medium-high heat. Add garlic and cook until
fragrant, 1 minute.
• Transfer to a bowl, then add rosemary, lemon
zest, the softened butter (for the sauce) and the
cracked black pepper. Season with salt and mash
with a fork to combine. Set aside.

• Return frying pan to medium-high heat with a
drizzle of olive oil.
• When the oil is hot, cook porterhouse steak for
3-4 minutes each side for medium-rare, or until
cooked to your liking. Using tongs, hold steak
upright and sear fat until golden, 1 minute.
• Remove steak from pan, cover and rest for
5 minutes.

• While the steak is resting, wipe out the frying pan
and return to medium-high heat.
• Add baby broccoli and green beans with a dash of
water and cook, tossing, until softened,
5-6 minutes.
• Add a squeeze of lemon juice, then season to taste
with salt and pepper.

• Thinly slice steak.
• Divide Porterhouse steak, sautéed greens and mash
between plates.
• Season steak with sea salt flakes, then spoon over
rosemary butter and resting juices.
• Serve with any remaining lemon wedges. Enjoy!
