Cooking Steps

  • Half-fill a large saucepan with water, add a generous pinch of salt, then bring to the boil over high heat.
  • Cook spaghetti in boiling water until ‘al dente’, 9 minutes.
  • Reserve pasta water (1/3 cup for 2 people / 2/3 cup for 4 people). Drain spaghetti, then return to saucepan.

  • Meanwhile, thinly slice heirloom tomato into wedges.
  • Roughly chop kalamata olives.
  • Slice lemon into wedges.

  • Roughly chop chorizo.

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook chorizo until golden, 4-6 minutes (Cook in batches if your pan is getting crowded).

  • Add heirloom tomatoes and cook until blistered, 2-3 minutes.
  • Add garlic, olives, the olive oil (2 tbs for 2 people / 4 tbs for 4 people) and a pinch of chilli flakes (if using) and cook until fragrant, 1 minute.
  • Remove pan from heat and stir through cooked spaghetti, half the Parmesan cheese, the reserved pasta water and a generous squeeze of lemon juice, until well combined. Season with salt and pepper.

  • Divide chorizo and heirloom tomato aglio olio pasta between bowls.
  • Garnish with remaining cheese to serve. Enjoy!
