Cooking Steps

Cook the fusilli

  • Boil a full kettle of water. Pour boiled water into a large saucepan over high heat with a generous pinch of salt.
  • Add fusilli to the boiling water and cook until ‘al dente’, 11 minutes.
  • Reserve pasta water (1/4 cup per person). Drain fusilli.
Cook the chicken

  • Meanwhile, in a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook diced bacon, breaking up with a spoon, until golden, 4-6 minutes. Transfer to a bowl.
  • Return frying pan to medium-high heat with a drizzle of olive oil.
  • When oil is hot, cook chicken breast strips and savoury seasoning, tossing, in batches until browned and cooked through, 4-5 minutes.

TIP: The chicken is cooked when it is no longer pink inside.

TIP: Cooking the meat in batches over a high heat helps it stay tender.

Bring it all together

  • To pan with chicken, add cooked fusilli, hidden red veg sauce, the reserved pasta water and baby spinach leaves, tossing until wilted and combined, 1-2 minutes.
  • Remove pan from heat and stir through the butter and half the Parmesan cheese until combined. Season to taste.
Finish & serve

  • Divide cheesy chicken and hidden veg red sauce pasta between bowls.
  • Sprinkle over remaining Parmesan cheese and bacon bits to serve. Enjoy!
