Cooking Steps

Bake the fries & pumpkin
1
  • Preheat oven to 240°C/220°C fan-forced.
  • Place potato fries on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. Roast until tender, 20-25 minutes.
  • Place peeled & chopped pumpkin and garlic cloves on a second lined oven tray.
  • Drizzle with olive oil, season with salt and toss to coat.
  • Roast until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

Cook the chicken
2
  • When the fries have 10 minutes remaining, cut chicken thigh into 2cm chunks.
  • In a medium bowl, combine chermoula spice blend and a drizzle of olive oil. Add chicken, turning to coat.
  • In a large frying pan, heat a drizzle of olive oil over high heat.
  • When oil is hot, cook chicken, tossing, until browned, 5-6 minutes.

TIP: The chicken is cooked when it is no longer pink inside.

Dress the rocket & heat the naan
3
  • Microwave naan bread on a plate, until warmed through, 20-30 seconds.
  • In a medium bowl, combine rocket leaves, a drizzle of white wine vinegar and olive oil. Season to taste.
Finish & serve
4
  • Squeeze garlic from skin and mash with pumpkin on top of each naan bread.
  • Top with Morrocan chicken, Greek-style yoghurt and dressed rocket. Serve with potato fries. Enjoy!
