- Boil the kettle. Half-fill a large saucepan with boiling water, then add a generous pinch of salt.
- Peel potato and sweet potato and cut into large chunks.
- Cook in the boiling water over high heat until easily pierced with a fork, 12-15 minutes. Drain and return to the pan.
- Add the butter and milk to the pan and season generously with salt. Mash until smooth. Cover to keep warm.
- Meanwhile, finely chop celery, brown onion and carrot.
- Heat a large frying pan over high heat.
- Cook lamb mince (no need for oil!), breaking up with a spoon, until just browned, 3-4 minutes.
- To pan with lamb add carrot, celery, onion, herb & mushroom seasoning and cook, until tender, 4-5 minutes.
- Preheat grill to high. Transfer the meat filling to a baking dish. Top with mash, spreading it out evenly. Sprinkle with grated Mozzarella cheese. Grill until browned, 5-10 minutes.
TIP: The grill cooks fast, so keep an eye on the pie!
- Divide harvest root vegetable lamb pie between plates. Enjoy!
