• Preheat oven to 240°C/220°C fan-forced. Cut sweet potato into fries.
• Place fries on a lined oven tray. Drizzle with olive oil, season with salt and toss
to coat. Bake until tender, 20-25 minutes.
• In the last 5 minutes of cook time, sprinkle Parmesan cheese over fries, then
bake until golden and crispy, 5 minutes.
TIP: If your oven tray is crowded, divide the fries between two trays.

• While fries are baking, finely chop garlic.
• In a medium bowl, combine beef mince, garlic, fine breadcrumbs, Nan’s
special seasoning and the egg. Season to taste with salt and pepper.
• Shape beef mixture into 2cm-thick patties (1 per person). Transfer to a plate.
• When fries have 15 minutes remaining, heat a large frying pan over
medium-high heat with a drizzle of olive oil. When oil is hot, cook patties until
just cooked through, 4-5 minutes each side.

• Meanwhile, slice avocado in half, scoop out flesh and thinly slice. Set aside.
• In a second medium bowl, combine a drizzle of olive oil and the vinegar in a
medium bowl. Season to taste, then add mixed salad leaves. Toss to coat.
• Halve bake-at-home burger buns, then bake directly on wire oven rack, until
heated through, 2-3 minutes.

• Spread bun bases with the mayonnaise.
• Top with Nan’s spiced beef patty, salad and avocado.
• Serve with Parmesan sweet potato fries. Enjoy!
