• Roughly chop cucumber.
• In a small bowl, combine miso paste, the soy sauce and a drizzle of sesame oil.
• Cut chicken breast into 2cm chunks.

TIP: The chicken is cooked when it is no longer pink inside.
TIP: Add a splash more water if the glaze looks too thick.

• When the fish has 5 minutes remaining, microwave basmati rice until steaming, 90 seconds.
• In a large bowl, combine shredded cabbage mix, cucumber and a drizzle of white wine vinegar and olive oil. Season to taste with salt and pepper.

• Divide rapid rice and cabbage-cucumber salad between plates.
• Drizzle over sesame dressing.
• Top with glazed miso chicken and pickled ginger (see ingredients).
• Sprinkle over mixed sesame seeds (see ingredients) to serve. Enjoy!
