Cooking Steps

Get prepped

• Thinly slice cucumber into half-moons.
• Thinly slice spring onion.  

Fry the eggs

• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• When oil is hot, crack the eggs into the pan. Cook until egg whites are firm and yolks are cooked to your liking, 4-5 minutes.
• Transfer to a plate and cover to keep warm. 

Cook the pork

• Return frying pan to high heat with a drizzle of olive oil.
• Cook pork mince, breaking up with a spoon, until just browned, 3-4 minutes.
• Add sweet soy seasoning and cook until fragrant, 1 minute.
• Meanwhile, microwave basmati rice until steaming, 2-3 minutes.

Finish & serve

• Divide sweet soy pork, rice, julienned carrot and cucumber between bowls. Drizzle carrot with some sesame oil.
• Top with fried eggs, gochujang and plant-based kimchi.
• Sprinkle with spring onion and sesame seeds to serve. Enjoy!
