Cooking Steps

Make the mash

• Boil the kettle. Half-fill a large saucepan with boiling 
water, then add a generous pinch of salt.
• Peel potato and parsnip, then cut into small 
chunks.
• Cook veggies, in the boiling water, over high heat, 
until easily pierced with a fork, 15-20 minutes.
• Drain and return to saucepan.
• Add the butter and milk to the cooked veggies and 
season with salt. Mash until smooth. 


TIP: Save time and get more fibre by leaving the potato 
unpeeled.

the veggies!

• Meanwhile, finely chop carrot.
• Thinly slice onion (see ingredients).

Cook the filling

• In a large frying pan, heat a drizzle of olive oil over 
medium-high heat. 
• Cook carrot and onion until tender, 4-5 minutes. 
Transfer to a bowl.
• Return the frying pan to high heat. Add lamb mince 
(no need for oil!), breaking up with a spoon, until 
just browned, 3-4 minutes. 
• In the last minute, add herb & mushroom 
seasoning and cook until fragrant. 

Make it saucy

• Reduce heat to medium, then stir in red wine jus 
and the water. Cook until slightly reduced,  1-2 minutes. 
• Remove pan from heat, then stir through cooked carrot and onion.


TIP: Add a splash of water if the filling looks dry. 

Grill the pie

• Preheat grill to high. Transfer lamb filling into a 
baking dish, then spread mashed veggies over the 
top with a drizzle of olive oil.
• Grill pie, until lightly golden, 8-10 minutes.


TIP: Grills cook fast, so keep an eye on the pie!

mixture evenly over the pie!
