Cooking Steps

Cook the fettuccine
1

• Boil the kettle.
• Half-fill a large saucepan with boiling water and add a generous pinch of salt.
• Cook fettuccine over high heat, stirring occasionally, until ‘al dente’, 11 minutes.
• Reserve some pasta water (see ingredients).
• Drain fettuccine, then return to saucepan. Drizzle with olive oil if needed.
TIP: ‘Al dente’ pasta is cooked through but still slightly firm in the centre.

Start the pasta sauce
2

• Meanwhile, pick thyme leaves.

• In a large frying pan, heat a drizzle of olive oil over high heat. Squeeze the pork, garlic & herb sausages meat out of its casing directly into the frying pan. • Cook sausage meat, breaking up with a wooden spoon, until slightly browned, 2-3 minutes. • Add soffritto mix and cook, stirring, until softened, 4-5 minutes. • Reduce heat to medium, then add thyme, garlic paste and tomato & herb seasoning, and cook until fragrant, 1-2 minutes. TIP: Cook pork sausages in batches if your pan is crowded.

Make it saucy
3

• Add tomato sugo, the brown sugar, the butter and reserved pasta water to the pan. Stir to combine and simmer until slightly reduced, 1-2 minutes. • Remove from heat, then add cooked spaghetti and baby spinach leaves, tossing until wilted and combined. Season to taste.

Finish & serve
4

• Divide herby tomato pork sausage bolognese and spaghetti between bowls. • Top with Parmesan cheese to serve. Enjoy!
