Cooking Steps

Cook the pasta

  • Boil the kettle.
  • Half-fill a large saucepan with boiling water and add a generous pinch of salt.
  • Cook penne in boiling water until ‘al dente’, 12 minutes.
  • Reserve pasta water (see ingredients). Drain penne, then return to saucepan. 

TIP: ‘Al dente’ pasta is cooked through but still slightly firm in the centre.

  • Meanwhile, halve snacking tomatoes.
  • Chop broccoli (including stalk!) into small florets.
  • Roughly chop bacon.
Make the pasta

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat. 
  • Cook broccoli and bacon, tossing until just golden, 4-5 minutes.
  • Add tomatoes and cook until blistered, 1-2 minutes.
  • Reduce heat to medium-low, then add cream cheese, light cooking cream, half the Parmesan cheese, the salt and reserved pasta water, stirring until smooth and combined, 2-3 minutes.
  • Remove pan from heat, then stir through cooked penne until combined. Season to taste with salt and pepper.  
Finish & serve

  • Divide crispy bacon, broccoli and cream cheese pasta between bowls.
  • Sprinkle with remaining Parmesan to serve. Enjoy!
