- Set your air fryer to 200°C. Drain and rinse half the chickpeas. • Cut chicken breast into 2cm chunks.
- In a medium bowl, combine chickpeas, paprika spice blend and a drizzle of olive oil.
- Place chickpeas into the air fryer basket and cook for 12-15 minutes until golden, shaking the basket halfway.
- Transfer to a large bowl and set aside to cool slightly.
- Return frying pan to high heat with a drizzle of olive oil.
- When oil is hot, cook chicken, tossing occasionally, until browned and cooked through, 5-6 minutes. Transfer to a paper towel-lined plate.
TIP: Chicken is cooked through when it is no longer pink in the middle.
TIP: No air fryer? Preheat oven to 220°C/200°C fan-forced. Place prepped chickpeas on a lined oven tray in an even layer. Roast until golden, 20-25 minutes.
- Place mozzarella cauliflower bites in air fryer basket and cook until browned and heated through, 10-12 minutes.

- While cauliflower bites are cooking, thinly slice cucumber into half-moons. Cut tomato into thin wedges. Slice lemon into wedges.
- In a small bowl, combine dill & parsley mayo and a good squeeze of lemon juice.
- To bowl with chickpeas, add cucumber, tomato, gourmet leaf mix, a generous squeeze of lemon juice and a drizzle of olive oil. Season.
- Divide spiced chickpea salad between bowls. Top with mozzarella cauliflower bites and chicken.
- Drizzle over mayo dressing and serve with any remaining lemon wedges. Enjoy!
