• Drain sweetcorn.
• Heat a large frying pan over high heat. Cook corn kernels until lightly browned, 4-5 minutes.
• Transfer to a bowl and set aside.
TIP: Cover the pan with a lid if the kernels are ‘popping’ out.
• Meanwhile, in a medium bowl, combine beef mince, fine breadcrumbs, Aussie spice blend, the egg and a pinch of salt.
• Shape beef mixture into 2cm-thick patties (1 per person).
• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook diced bacon, breaking up with a spoon, until golden, 4-6 minutes. Transfer to paper-towel lined plate and set aside.
• Return large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook beef patties until just cooked through, 4-5 minutes each side (cook in batches if your pan is getting crowded).
• While patties are cooking, halve bake-at-home burger buns and toast or grill to your liking.
• Thinly slice tomato into rounds.
• Separate baby cos lettuce leaves.
• Spread burger bun bases with garlic aioli and Dijon mustard.
• Top buns with cos lettuce, tomato rounds, classic beef patties, bacon rashers and gherkin relish.
• Serve on plates with charred corn and any remaining lettuce. Enjoy!
