• Halve snacking tomatoes. Slice lemon into wedges. Roughly chop cucumber. Pick rosemary.

• Boil the kettle. In a medium bowl, add couscous, currants and stock concentrate
• Add the boiling water (3/4 cup for 2 people / 1 1/2 cups for 4 people) and stir to combine. Immediately cover with plate and leave for 5 minutes.
• Fluff up with fork and set aside.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Pat salmon dry with paper towel and season both sides.
• When oil is hot, cook salmon, skin-side down first, until just cooked through, 2-4 minutes each side. • Remove from heat, then add the honey, rosemary and a good squeeze of lemon juice, turning salmon to coat until fragrant, 1-2 minutes.
TIP: Patting the skin dry helps it crisp up in the pan!

• In large bowl, combine snacking tomatoes, cucumber, spinach & rocket mix and a srizzle of olive oil and a good squeeze of lemon juice. Season with salt and pepper.
• Divide jewelled couscous and cherry tomato salad between bowls. Top with zesty-rosemary salmon.
• Drizzle over basil pesto and garnish with pine nuts. Serve with any remaining lemon wedges. Enjoy!
