
Give burger night a glow-up with juicy lamb patties infused with warm Middle Eastern-style spices for a serious hit of flavour. Tucked into toasted buns, the rich meat is perfectly balanced by the sharp, vibrant crunch of pickled red onions and served with a side of golden potato fries. Thanks to a few clever shortcuts, you get all that pub-style satisfaction without the usual prep fuss.

• Preheat oven to 240°C/220°C fan-forced.
• Place potato fries on a lined oven tray.
• Drizzle with olive oil, season with salt and toss to coat.
• Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide fries between two trays.

• Meanwhile, thinly slice red onion (see ingredients).
• In a small bowl, combine the white wine vinegar and a good pinch of sugar and salt. Scrunch sliced onion in your hands, then add it to pickling liquid. Add enough water to just cover onion. Set aside.
• In a medium bowl, combine lamb mince, Middle Eastern seasoning, the egg and fine breadcrumbs. Using damp hands, shape lamb mixture into 2cm-thick patties (1 per person).

• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Cook lamb patties until just cooked through, 4-5 minutes each side (cook in batches if your pan is getting crowded).
• While the patties are cooking, halve bake-at-home burger buns and bake directly on a wire oven rack until heated through, 2-3 minutes.

• Drain pickled onion.
• Spread burger bun bases with the mayonnaise.
• Top with spiced Middle Eastern lamb, some pickled onion and mixed salad leaves.
• Serve with potato fries. Enjoy!
