• Add the water to a medium saucepan and bring to the boil.
• Add jasmine rice, stir, cover with a lid and reduce heat to low.
• Cook for 10 minutes, then remove the pan from heat and keep covered until rice
is tender and all the water is absorbed, 10 minutes.
TIP: The rice will finish cooking in its own steam so don’t peek!

• Meanwhile, thinly slice cucumber and red radish.
• Drain sweetcorn.

• Heat a large frying pan over high heat.
• Cook corn kernels until lightly browned, 4-5 minutes.
TIP: Cover the pan with a lid if the kernels are “popping” out.

• To the saucepan with rice, add Japanese-style dressing. Toss until well coated.
• Divide seasoned rice, cucumber, radish and charred corn between bowls.
• SPICY! Use less sriracha if you’re sensitive to heat! Tear over smoked salmon, then
drizzle with sesame dressing and sriracha.
• SPICY! Use less wasabi peas if you’re sensitive to heat! Garnish with pickled ginger
and wasabi peas to serve. Enjoy!
